Ingredients:
- 2 hot smoked salmon fillets
- 1 cup of shredded cabbage & 1 cup of sliced pak choi (or any dark leafy greens)
- 3 raddishes, sliced
- 2 small carrots, diced
- 1 tbsp of oil (coconut oil works well)
- 2 tbsp Teriyaki sauce
- 1 packet of pre-cooked jasmine rice (or rice that you’ve previously cooked and cooled)
- 1 medium egg
- 1 tbsp soy sauce
- 2 spring onions, sliced
- 1 tbsp sesame seeds
Instructions:
- Prepare the cabbage, pak choi, raddishes and carrots
- Fry them gently in oil. You can add a splash of water and cover with a lid to lightly steam them.
- Once the veg is softened, add the Teriyaki sauce and warm through. Set aside while you prepare the rice.
- Fry the rice to heat it up. Push it to one side of the pan.
- Crack the egg on the other side and stir it gently to create scrambled eggs.
- Mix the rice and eggs together with the soy sauce.
- Serve the egg-fried rice and teriyaki veg with the hot smoked salmon.
- Top with the sliced spring onions and sesame seeds.
Personally, I like to eat the salmon cold as it tastes less “fishy”, but feel free to warm up as per packet instructions.
